\"\"<\/a>One of my favorite things to do is to make fun jello shots<\/a> and I’ve got a great one for you today! I was thinking how pretty the top (or technically the bottom) of a pineapple upside down cake is and it dawned on me that it would be the perfect method and flavors for a jello shot, too. <\/p>\n\n\n\n

I didn’t know this, but apparently raw pineapple doesn’t play well with gelatin (it has an enzyme called bromelain that breaks up the\u00a0gelatin), so you have to cook your pineapple rings first so they stay nice and pretty\u2014news to me!<\/p>\n\n\n\n

\"\"<\/a>Pineapple Upside Down Jello Shot, makes 8<\/p>\n\n\n\n

1 1\/4 cup pineapple juice
1\/4 cup butterscotch schnapps<\/a>
1\/2 cup vanilla<\/a> or cake<\/a> vodka
2 packets of plain gelatin<\/a>
fresh pineapple
maraschino cherries<\/a>
silicone circle molds<\/a>
\"\"<\/a>Pour your pineapple juice\u00a0into a pot and warm over medium heat. When juice is warm, sprinkle in your gelatin and stir until dissolved in the juice\u2014don’t let your juice come to a boil!<\/p>\n\n\n\n

\"\"<\/a>While your gelatin is dissolving, use a knife to cut eight\u00a01\/2″ thick pineapple slices into circles that are just a bit bigger than your silicon circle molds. Cooking them causes the pineapple to shrink a bit so they should just fit the mold once they are cooked. <\/p>\n\n\n\n

Cut a smaller circle in the middle of the pineapple for the cherry (or you can use circle cutters<\/a> too) and bake your pineapple slices for 3 minutes in the microwave (or cook them for a few minutes in the oven). <\/p>\n\n\n\n

Let the pineapple cool a bit while you do the next step.<\/p>\n\n\n\n

\"\"<\/a>Once the gelatin is dissolved in your juice, add in your vodka and schnapps and stir together.<\/p>\n\n\n\n

\"\"<\/a>Place your pineapple rings at the bottom of each mold and add a cherry in the middle. Pour in your juice mixture on top of each ring and place\u00a0in the fridge to set for at least 6 hours. <\/p>\n\n\n\n

Once they are firm, you can pop them out! I also placed half a cherry on top of each one to give them a bit of height on the plate. Serve immediately.<\/p>\n\n\n\n

\"\"<\/a>\"\"<\/a>Yum!! The pineapple ring on top gives the jello shot a nice juicy flavor and the butterscotch schnapps mimics the brown sugar caramelization that occurs in the real cake as well. <\/p>\n\n\n\n
